Raw Fruit and Nut Slab

I adore chocolate. Always have. I never thought I’d be able to make my own though but raw chocolate is surprisingly easy to make (once you know how). All you have to do is melt the ingredients then let them set together in the freezer for two hours. Plus, there aren’t many fruit and nut bars that can actually claim to be good for you. This one can. It is of course still calorie dense so as with everything (except kale) eat in moderation.

Ingredients:
200g cacao butter
4 tbsp cashew butter
2 tbsp coconut oil
1 tbsp agave syrup
4 tbsp cacao powder
1/2 cup of pecans
1/2 cup of raisins
1/2 cup of goji berries

Method:
Put your raisins, goji berries and pecans in a food processor and pulse for a few minutes. You don’t want to blend the nuts too much, there should still be chunky pieces. Leave this to the side. Fill a pan up with water and place it on the hob. Add the cacao butter, cashew butter and coconut oil to a bowl and place this on top of the pan. Stir gently every couple of minutes until melted. Once they are melted, pour into a mixing bowl with the raw cacao powder and agave syrup. Use a spatula to mix it all together and allow it to thicken. Line a baking tray with baking paper and pour the chocolate mix in, it should be about a centimetre thick. Pour the raisins, goji berries and nuts on top. Place the chocolate into the freezer to set for about two hours. Once it is really solid, remove it from the freezer and break it into large chunks. Leave it in the fridge until its all gone. Yum.
