Kale, Asparagus and Sundried Tomato Salad

Kale, Asparagus and Avocado are three of my all time favourite greens.  This is one of mine and Kitty’s go to salads because its so quick and easy to make.

Ingredients (for two people):
4 big handfuls of kale
1 100g pack of asparagus
1 200g pack of broccoli
1 avocado
8 sundried tomatoes
sesame and sunflower seeds

Dressing:
2 tbsp olive oil
2 tbsp tahini
1 tsp balsamic vinegar
1 tsp lime juice

Method:
Pre heat the oven to 180 degrees, cut up asparagus and broccoli and put on a baking tray.  Pour over 2 tbsp olive oil and some salt and let roast in the oven for 10-15minutes.  While this roasts put the kale into a mixing bowl and remove the stalks.  Add all of the dressing ingredients to another bowl and mix together.  Pour your dressing onto the kale and massage it in with your hands.  Sprinkle on your seeds and cut up avocado.  Add the roasted veggies when their done.
