Sweet Potato Granola


So lately I’ve been trying to get really creative (and healthy of course) with my recipes to inspire you and this is what I’ve come up with… sweet potato disguised as granola!  I imagine the title of this recipe will have some mixed reactions but I promise you sweet potato just makes the granola amazingly sweet and nice an chunky as opposed to it being the dominant flavour.  I love sneaking my favourite vegetables into meals to add extra nutrition 🙂 I’m also learning that eating healthy doesn’t have to be expensive.  Most of the ingredients for this granola have been brought from Aldi.  Some of the ingredients you won’t have to buy again for a while, like the oats, maple syrup and coconut oil.  This granola will last for 3 months if kept in an air tight container but I think you’ll have finished it before then.
Wet Ingredients:
1 Sweet Potato
1 Tbsp Maple syrup
1 Tbsp Coconut Oil
1/2 tsp cinnamon

Dry Ingredients:
2 cups of mixed nuts
2 cups of mixed fruit
2 cups of oats

Bake the sweet potato for 30minutes. Then scoop out the inside (till it makes half a cup of mash) and put it in the blender with the coconut oil, maple syrup and cinnamon. Then mix your oats, nuts and wet ingredients together in a baking tray. Bake for twenty minutes, turning every 5-10 so the nuts don’t burn. Then add your dried fruit at the end. I enjoy with chopped banana and almond milk (the unsweetened of course).
