Smashed Avocado with Strawberries and Basil

Hello lovely people,

I wanted to post this snack recipe because if like me you adore avocado on toast, you’ll appreciate a new variety.  I notice that whenever I have egg and avocado on toast I feel completely satisfied because I’ve had good fats, protein and carbohydrates.  Unfortunately the egg doesn’t quite go with this recipe, so afterwards I have a spoonful of peanut butter straight from the jar instead.

I use a full avocado when I have this for breakfast because I enjoy it piled high but adjust the amount accordingly.

Ingredients:
1 avocado
1 piece of wholemeal toast
Lime juice
Salt
Balsamic Vinegar
A handful of strawberries
Basil

Method:
Cut, slice and scoop the avocado out and put into a bowl.  Add a teaspoon of lime juice and salt.  Mash with a fork.  Once your bread is toasted add the avocado on top. Chop a few leaves of basil and a handful of strawberries for the next layer.  Finally, add a dash of balsamic vinegar.
