I’m a little slow on the up take, but Shakshuka may well be my favourite eggs for dinner recipe.  This has to be one of the cheapest, most comforting ways to eat healthy.

2 tbsp olive oil
1 small white onion
1 clove of garlic
1/4 tsp chilli
1/2 tsp cumin
1/2 tsp paprika
1/8 tsp cayenne pepper
2 cups of kale
1 x 400g tinned tomatoes
2 eggs
Parmesan cheese
Sea Salt and Pepper

De-stalk the kale and add it to a blender with the tinned tomatoes.  Blend until the kale has broken down and combined into a sauce.  Heat the pan on a medium heat (heat the grill while you are waiting too) and add the olive oil.  Finely chop the onion and cook with sea salt until soft (usually 5 minutes).  Add the spices (the flavour is more intense when you add the spices to the onion directly).  Let this cook on a medium heat for another few minutes.  Next add your kale and tomato sauce and let cook for 15 minutes (put the lid on the pan if you have one).  Make small divots in the sauce for the eggs and slowly crack them in.  Let cook for a few minutes and then place under the grill until the eggs are cooked.  Add salt and pepper to serve.
