Blueberry Mug Pancake

This recipe is easy and only serves one, which is perfect if you don’t want to make a big batch of pancakes that end up going to waste.  For some reason I’ve never been able to master flipping pancakes-problem solved.  Enjoy : )

Dry Ingredients:
1/2 cup of almond flour
1/2 tsp baking powder
A dash of salt
1/2 tsp cinnamon 

Wet Ingredients:
2 eggs
4 tbsp almond milk
2 tbsp melted coconut oil
1/2 tsp vanilla
2 tbsp blueberries

Method:
Combine the flour, baking powder, cinnamon and salt in a bowl.  In another mixing bowl combine the egg, milk, coconut oil and vanilla.  Mix the wet and dry ingredients together and add the blueberries.  Put in the microwave for two minutes but check after a minute.  Serve with extra yoghurt, if you like.
