Apple Spiced Baked Oatmeal

Ingredients:
2 cups of rolled oats
1/2 cup of chopped almonds
1/4 cup of pumpkin seeds
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
A pinch of sea salt
1 egg
2 cups of almond milk
1/4 cup of honey
1 tsp vanilla
2 apples (chopped into small pieces)
1 tbsp coconut oil

Method:
Pre-heat the oven to 180 degrees celsius.  Grease the bottom of a baking dish with coconut oil then set aside.  Place the rolled oats, almonds, pumpkin seeds, baking powder, spices and salt in a mixing bowl.  In a separate bowl beat the egg and add in the almond milk, honey and vanilla and stir well to combine.  Spread the chopped apples into an even layer on the baking dish.  Pour the wet ingredients over the oat and nut mixture and combine, then pour this over the apples until everything is evenly soaked.  I added some sliced apple on top but that’s not necessary, then drizzle coconut oil or honey over the top and bake for 30-40minutes.  You’ll know it’s done when the oatmeal is set, slightly browned and your kitchen smells like Christmas.  Serve with yoghurt or milk.
